Sugar is used because it is a complicated substance that is both sweet and delicious, while also being totally destructive to the body, causing major issues overtime to the mind and memory. The doorway references the body and its breakdown.

Sugar Doorway eventually collapsed and was put back together using metal rods, before eventually falling again.The sugar melts in the sun and the heat, becoming very fleshy over time before dissolving completely..
